Egg MetMuffin
Chef Jeffrey Fournier has long admired Pastry Chef Paige Retus’ homemade English muffins. Savoring the smell when she takes them fresh out of the oven on Sunday mornings is one of his favorite things about sharing The Metropolitan Club kitchen with her. In order to celebrate this delectable breakfast staple, Jeff and Paige have collaborated to create their version of a classic egg and cheese sandwich.
Jeff begins with a piping hot, freshly poached egg. Then he adds creamy Manchego cheese and fresh hollandaise sauce. Next comes salty Serrano ham. Lastly, for those who want to experience true indulgence, he adds the earthy flavor of shaved black truffles or a half-ounce of caviar. The Egg MetMuffin is born-- a playful, indulgent twist on America’s favorite breakfast sandwich.
The Egg MetMuffin is both classic and extravagant. For those who prefer simplicity, it is available unadorned (egg, Manchego cheese, Serrano ham, and hollandaise). For those who’d like to bask in some Sunday morning opulence, the caviar and shaved black truffles should provide all the satisfaction they need.

The Metropolitan Club Walk through the doors on a Sunday morning at The Met and aromas of French press coffee, freshly baked pecan rolls, and Vermont maple syrup fill the air. Soft jazz plays in the background in a dining room abuzz with attentive wait staff and happy guests. A warm and cozy luxurious home comes to mind.
